What is Naengmyeon?
Naengmyeon is thin, chewy noodles served cold. There are two schools. Pyongyang style (평양냉면) uses buckwheat noodles in a pale, delicate beef broth; Seoul's old Pyongyang-style houses have devoted followers. Hamheung style (함흥냉면) uses springy potato-starch noodles and is often eaten bibim (mixed with spicy sauce) or topped with raw skate.
What does Naengmyeon taste like?
Pyongyang style is famously subtle — first-timers sometimes call it bland, regulars call it clean. Hamheung style is chewier, sweeter and spicier.
How do you eat Naengmyeon?
Taste the broth before adding anything. Staff may offer to cut the noodles with scissors; say yes if you find them hard to bite. Mustard and vinegar are on the table. Many people drink the hot meat broth (yuksu) served in a kettle before or after.
Where can I eat Naengmyeon in Seoul?
Old naengmyeon houses (면옥) around Euljiro, Chungmuro and Ojang-dong, and almost every Korean BBQ place as an after-grill dish.
