What is Bibimbap?
Bibimbap is a bowl of rice topped with namul (seasoned vegetables), often beef or raw beef (yukhoe), and a fried egg, which you mix together with gochujang just before eating. In a hot stone bowl (dolsot) the rice at the bottom turns crisp. Jeonju is its most famous home, but Seoul has plenty of good versions.
What does Bibimbap taste like?
Fresh, nutty and as spicy as you make it. Sesame oil, crunchy vegetables and the crisp rice of a dolsot bowl make it more than the sum of its parts.
How do you eat Bibimbap?
Add chilli paste a little at a time, then mix everything thoroughly with a spoon (not chopsticks) until every grain is coloured. In a stone bowl, press the rice against the sides and wait a minute for the crust to form.

Korean set-meal restaurants everywhere; yukhoe bibimbap at Gwangjang Market; refined versions around Namsan and Insadong.
